Baked Mediterranean Veggies

I suppose this is an original recipe. Technically, I started with about 5 different recipes, took what I like from each of them, and then improvised the rest:


Makes 8 portions:

Total Cost: $10.01

Cost Per Portion: $1.25


This is another easy to prepare meal, just a bit time consuming due to all the veggies:

  1. Preheat the over to 400*F
  2. Dice up all your veggies and toss them into a baking dish
  3. Add oil and spices to the baking dish
  4. Mix everything up thoroughly in the baking dish
  5. Bake at 400*F for about an hour

The Verdict

An very tasty side dish, and it pairs wonderfully with the Curry Chicken Roti. However, I myself was not a fan of the eggplant as it was prepared here. I was a bit chewy and mushy, and I ended up picking it out of my portion altogether. However, I’m eager to get some more eggplant in my diet; I’m not ready to give up on this odd-looking plant just yet.

Thoughts for next time:

  • Saute the eggplant in a little olive oil to make it nice and crispy prior to baking
  • Remove the eggplant skin first (which is a bit chewy)
