Beef and Beet Stew

This is an original recipe, and a good excuse to clear out all the leftover produce in my fridge.


Makes 6 portions:

Total Cost: $23.34

Cost Per Portion: $3.89


Here’s what I did:

  1. Brown the meat with oil and seasoning in a saucepan
  2. Dice up the shallots, add to saucepan
  3. Dice up the carrots, add to saucepan
  4. Add 4 cups beef broth to the crock pot
  5. Dump contents of saucepan into crock pot once meat is medium rare
  6. Grind up endive in food processor, add to crock pot
  7. Grind up kale in food processor, add to crock pot
  8. Peel and dice beets, add to crock pot
  9. Peel and dice red onion, add to crock pot
  10. Add salt, pepper, cumin and rosemary to crock pot
  11. Leave that sucker cooking all day long

The Verdict

This was my first time cooking with beets, and I wasn’t exactly sure what to do with them. I was surprised to learn that beets “bleed” a dark red liquid which can make a big mess if you aren’t prepared. However, as usual, once everything just sat in a crock pot for awhile, everything started to taste just wonderful.

I also really like the macros for this meal- packed with protein, with relatively low fat.
