Recently my friend Nick came to visit, and we went out for some Indian food while he was here. He had never had it before, and so the trip allowed me to look at Indian food with fresh eyes once again. It also got me craving more.

The solution? A super easy recipe for Lamb Curry you can make in the crock pot:

Ingredients

Makes 10 portions:

Total Cost: $32.88

Cost Per Portion: $3.29

Instructions

This is about as easy as it comes:

  1. Dice up all the veggies
  2. Toss all the ingredients (except the rice) into the crock pot
  3. Let that sucker cook all day long
  4. Add water to crock pot to avoid burning
  5. Make the rice by boiling it in water and straining
  6. Serve over a bed of rice

The Verdict

In the interest of better health, I added a full pound of spinach, and 3 tablespoons of ground flax seed for extra fiber. As a result, this sucker clocks in with a full 14g of fiber per serving. The macros are ok, but this is very carb-heavy due to the all the rice. Be aware: this is a full 705 calories per serving; a full self-contained dinner.

This also marked our first official dinner guests, Julie and Jeff. And considering that they both cleaned their plates, I’m going to call this dinner a success.

  • These portions are a tad big; maybe break into 8 portions next time
