Roasted Cabbage Slices

This recipe comes care of Katie over at Wellness Mama. While preparing the Mustard Grilled Pork Chops I realized I need a nice veggie side dish to go with it. Since we hadn’t eaten cabbage in awhile, I figured I would give it a try.

The Verdict

The cabbage itself is rather bland, so the main flavor comes from the coconut oil, which is very sweet and fatty. Even with amble salt and pepper, I felt these were just sort of blah. However, once I mixed in the apricot relish from the Mustard Grilled Pork Chops I thought they were ok.

Thoughts for next time:

  • Add some sautéed onions
  • Add some bell peppers
  • Any veggie that would add a little more taste would be welcome
  • Use less coconut oil next time, or use butter instead
