Taco Soup

This is an original recipe. Something like a chili, but I like to call it “Taco Soup”.


Makes 8 portions:

Total Cost: $43.19

Cost Per Portion: $5.40


Pretty simple stuff:

  1. Open up all the cans and dump contents into large pot
  2. Dice up onions
  3. Sautee onions with ground beef and olive oil
  4. Add meat, onions and grease into the large pot
  5. Dice up all the peppers; remove seeds if you prefer it mild
  6. Add red swiss chard for the sake of a leafy green vegetable
  7. Add all the seasonings
  8. Cook on a low heat until it tastes wonderful

The Verdict

This isĀ not a paleo meal, because much to my dismay, beans are not a paleo food. However, I love beans, so I went ahead and used a whole bunch in this recipe. I also feel as though I got the seasoning just right this time; a dash of cinnamon really compliments the peppers.

Thoughts for next time:

  • I forgot the avocado again!
